Answer: 
Grainger has contacted the product supplier and has been advised by them of the following.

The humidistat on this fan is adjustable from 20% to 80% relative humidity. It will close contacts on humidity rise. The temperature control is automatic, closing contacts at 50* and opening contacts at 40*.
