Answer: 
According to the manufacturer, this switch has a Viton seal and therefore has a differential of 2.1-7 psi at your operating pressures. The range will work to turn the pump on at 40 psi, but because of the max. differential, the maximum off pressure would be 47 psi. Answer: 
Yes, this is adjustable. You can set this unit at 55PSI on the increase. It will reset anywhere between 36.8 PSI and 48PSI
