I got a 8x7x18 cargo/cook trailer with stove/range, griddle, and deep fryer, barn and man doors.
I want to exhaust heat out the top. What do you recommend?

You need an exhaust fan, very small exhaust fan, because the building is small 9' x 9' It will be a good idea to have a thermostat to turn "on" the exhaust fan when the room is too warm, maybe over 80f. Look for an exhaust fan bathroom, like 80 cfm or 100 cfm. Get insulation for the roof, so the building doesn't get too warm or cold, the freezer can't work with a very hot 95f or cold 55f temperature. Grainger catalog has exhaust bathrooms or look for one small.

I need more information to answer your question, you most probably don't need explosion proof, but I need more information to help you. Call your local city building code inspector he will help you. You may need: -A 0.6 cfm/ft2 calculate ft area floor, multiply by 0.6. -B use 6 minutes changes, calculate the volume of the room ft3, divide by 6, that's will be the cfm. Take the bigger one (A or B)

Since this is a sun porch, just open two or three windows, the smoke will go out, if you want to use it on cold temperature, we need more information.

I need more information, the speed (1.7 m/s) depended the size of the duct and the volume the air that you are pulling. So, Q cfm = S ft/m X A ft^2 . If you multiply the area of the section of the duct by the speed of the air on that section, you will have the flow (cfm)

Current one,made by Dayton, is too powerful (and not variable speed) and need to replace. What additional information is needed to get correct fan or can you give me item #'s of suggested fans?

I need to know the size of the hood, also your hood has to have a filters and grease trap. I never use a variable speed exhaust fan for a kitchen hood, because if you turn down to much the speed, then you are not pulling out air and grease. We calculate the flow air with the hood size, and that is the way should work. If your exhaust fan its too big, may be its not the right for your hood. Local and national codes will not allow to operate the hood with out the minimum air flow, its dangerous, also many codes, depend where you are, require make up air in the kitchen, in case of fire on your fryer the exhaust fan has to be operate with the full speed so your fire suppressor heat-fuse will sense the fire, open and knock the fire, keep flame up. Ask your local fire marshal before. If this is a residential hood you don't need it.
